Eight people, by appointment, usually poured by the owners. That is the whole format, and it is the reason to come.
The wine
Ask for Time Waits for No One, the 2021 estate Pinot Noir — $55, and still available. One thing to know: the estate Pinot is renamed every vintage, always on a theme of time. The 2022 was Nothing But Time, the 2023 is Time Constraint. If you are reading this a year from now, ask for the current one by the series rather than the name.
The two that do not rotate are The Heretic, from the north slope, at $75, and Jaguar, the reserve, at $100.
Who it is for
An intimate escape, built around ambiance and experience so you can fully take in small-batch wine made carefully. It is a private place to drink something good, and that privacy is the product as much as the Pinot is.
Who would find it wrong: anyone who is not looking for an experience. If you want to taste and move on, the booking requirement and the eight-person limit are obstacles rather than features.
What to expect
Thursday to Monday, by appointment through their booking calendar; private tastings on other days by phone. Eight is the normal limit and larger parties need arranging. They do not publish a tasting fee, so ask when you book.
